Keto Day 7 - Still sticking to it!

Yesterday morning, I had to leave my apartment extra early so the parking lot ice could get scraped up.  I haven't mastered nightly food prep yet, but I tried my best on Wednesday evening to get things ready for a swift morning, to include finding instructions for baking eggs in an oven.  When Thursday morning came, I got up, set my toaster oven to 350 degrees, grabbed 4 oven-safe ramekins (best 12-ish dollars ever spent), sprayed them with olive oil pan spray, cracked an egg in each, sprinkled about 1/8 cup cheddar cheese in each, stirred them, and put them in to bake for 30 minutes.

During those 30 minutes, I showered and got dressed. I went to the kitchen, pulled the ramekins out of the toaster oven to cool, and went back to finish getting ready.  Once ready to go, the eggs easily popped right out of the ramekins and I was able to take them to work in a container.  They kept well, tasted great cold, and did not make my office smell like cooked eggs when I opened the container!! Win!

This, my friends, was a perfect multi-tasking morning hack! Seriously, I will definitely be doing this again... and again... and again. 

Last night I had dinner with my boyfriend at his house for date night. I had previously told him about switching to this ketogenic WOE (way of eating), and am happy to report that he's very supportive of my endeavors.  He even called me earlier this week to discuss dessert options we could both enjoy. Well, he made a super sweet effort to include strawberries with dinner specifically for me, and I just couldn't decline. I ended up about 14g over my 20g carb limit for the day, and my gut totally paid for it this morning. Oofta.

Do not, I repeat, do not go over your set carb limit.  Well, maybe you can... but I apparently can't!
